Description
A collaboration with our friends from Yeasty Boys, we took a golden sour malt base, and used Trappist Yeast for our primary fermentation because our shared love for Orval. Just before we transferred the beer into red wine barrels, we added grape juice to start the first layers of complexity. The microbes from the oak barrels will assist this beer in becoming something quite exiting and unexpected. You will notice the subtle oak flavours with tannin's, still in the oak from the wine. We pitched with Brettanomyces Amalgamation, and after 3 months of re-fermentation in barrel, lactobacillus was added to give it some final depth in tartness. ABV: 7.2. pH: 3.2. IBU: 15. Time in Barrel: 8 months. Barrel type: Red, Cab Sauv.
