Description
For this year #IWCBD foraging theme we brewed for you, Baltic Brown London Porter reaching back to 18th century. Going back so far in time made us wonder how our Brewery would look like in those days, when it was not unusual for people to forage for some of what they required.
Where would we source the ingredients for our beer?
Being a young Brewery, we most likely would source what is needed from the larger London markets, do battle with the merchants for the best price. We would use local products but on occasions search out merchants from foreign lands before they make ready to travel to mysterious corners of the world.
Make use of French hops for that amazing forest fruit flavour and aroma, Baltic lager yeast from European sellers who need to sell before making their way home. We would harvest seaweed from the Kent Coastline and use wood chips from broken oak barrels for extra touch.
