Description
A crisp, super clean, pale ale with a firm malt backbone and a medley of modern hops that throw up all sorts of delicious exotic fruit notes from gooseberry to kumquat. We brewed Reflections on a Floating World with our friends at Pivovarna Pelicon in Slovenia. Last year, for our 10th Anniversary collaboration series, we were lucky enough to travel down to Slovenia to brew a delicious Brett-fermented Brut IPA. This time they flew up to England to talk bio-transformation and to play with aromatic Slovenian and New Zealand hops. Our head brewer, JK, recently came across some literature about how Kolsch beers were originally dry hopped. This slice of inspiration coincided with the release of a new Kolsch yeast, which boasts significant levels of beta-glucosidase activity an enzyme identified as having positive bio-transformation characteristics that aids and changes the aromas achieved via dry hopping. To up the ante, we threw in an extra dose of the beta-glucosidase enzyme to aid this aromatic supercharging process. What we ended up with was a strong and hoppy pale ale thats more ghost of Kolsch than a faithful interpretation of the classic style itself. Chock full of Styrian Dragon, Styrian Fox, Nelson Sauvin and backed up by the very rare Riwaka the aroma is reminiscent of gooseberry, kumquat, grapefruit and other exotic fruit. Intoxicating in more ways than one! Reflections on a Floating World is a seemingly simple strong pale ale with a bio-transformative twist.
