Cantine Ermes was founded in 1998 by young winemakers in the Belice Valley, Sicily, to revive the region's winemaking after the 1968 earthquake. The cooperative now includes around 2355 members, with a significant portion being under 35, showing a promising future for the local wine industry.

The 10.6-hectare estate benefits from a unique microclimate, perfect for growing indigenous varieties like Nero D’Avola, Grillo, Cataratto, and Zibibbo, alongside international grapes. The soil composition is highly varied, including limestone, volcanic ash, and sand, contributing to the distinct flavors of their wines. The cooperative focuses on sustainable practices, utilising solar power and eco-friendly techniques.
