.Our greatest love is Belgian yeast and this what we use in all the beers we make. This means that most of our beers will taste a bit different from the ‘norm’ (if there is such a thing anymore!) as our yeast has prominent spicy flavours, or phenols. To do it justice, the yeast is at the centre of our recipes. Hops, malt etc come second. That doesn’t mean we don’t use hops, malts and other exciting ingredients, nor do we shy away from using them in abundance at times! It just means that we are always aware of our yeast and want to do it justice. We aim to create beer that really showcases and suits the yeast we use.
