Funk Dungeon - Peach Tea Saison

In 2022 we teamed up with our friends Colleen and James from Duckchicken cider, combining the lees from some cider with a partially fermented beer, infused with a fruited green tea, and transferring it into neutral American oak barrels for secondary fermentation. The natural yeasts from the fruit skins bring a distinct fresh apple character, layered with a hint of hibiscus florality and a subtle peachiness from the tea, which also adds a gentle tannin character. The transformative effect of 19 months of aging on oak have given this stunning Saison a soft astringency that rounds out and balances the character of the beer
