Pi Veloce is our brewing project dedicated to the yeasts of the Brettanomyces species (defined as "wild") and consists of two beers, both of the Brett Ale type : this, for which we chose the Lambicus strain, and his sister in which we use the Bruxellensis .
The epithet of Achilles, a hero famous for his speed in running, symbolizes that within the slow production cycles that characterize C del Brado , these are our fastest-growing beers. In fact, they are born to be drunk fresh (when the aromatic explosiveness is at its peak) or they can be left to age, to discover its fascinating evolution over time.
The must of Pi Veloce Lambicus is made with an important percentage of substitute cereals (wheat and rye) and by a shrewd English- style hopping (both bitter and flavored). The fermentation (carried out since the primary with brettanomiceti Lambicus) and maturation (about two months) take place directly in wood : mainly in large barrels (3,000 lt) which in the past housed wine. This is followed by a subsequent refinement in the bottle or stem to allow Brett to continue to express himself.
The use of the specific Brett Lambicus strain is intertwined with the chosen hopping, giving fruity tones of ripe apricot, citrus and earthy notes, together with a delicate acidulous presence and the intriguing funky components typical of brettanomyces (recognizable even in the young beer, for then reinvigorate with aging over time).
A marked dryness, the pleasant minerality and a delicate bitterness give the beer a great drinkability.
