Nessun Dorma is our Vieille Saison and takes its name from the famous romance by Puccini's Turandot tenor: the expectation of the Unknown Prince, who craves the rising of the day to conquer the ice princess's heart, seems to us a fascinating metaphor for the time needed to mature and refine this product.
The term Vieille (literally old / ancient) refers to the Saisons historically produced in Hainaut (a French-speaking province of Wallonia, in the south of Belgium). The peasants produced this beer at the end of winter / spring, and then consumed it in the summer to strengthen themselves during long working days.
The poorly controlled production processes of that time, together with the aging before the beer was consumed, gave rise to wild fermentations (contamination of wild yeasts and bacteria).
The must, made with a good percentage of unmalted wheat and oats , receives a delicate hopping of noble hops .
Following a fermentation in steel through Saccharomyces, the beer is aged from 6 to 8 months in tonneaux and barriques (which previously contained wine), with contamination of brettanomycetes and lactic bacteria , recovered by the barrel itself.
At the end of the aging we are going to blend the contents of all the vats with a small percentage of the same No Dorma young, recently entered the cellar , to add freshness, elegance and body to the character of beer.
The final assembly produces a rustic drink, with a fine perlage and a marked acidulous presence. Citric, spicy and white fruit notes are softened by floral scents and by the complexity conferred by the wood .
Nessun Dorma is a refreshing beer with a wild depth, which will certainly enjoy further aging in your cellar.
