Description

Sei Montagne is a wild ale with primary fermentation through Brettanomyces Lambicus , aged from 5 to 7 months in barrels with a microbial environment from the Brada cellar and subsequent cold infusion of Pu'er tea .
The name of this beer comes from the famous six tea mountains of the province of Yunnan ( China), from which most of the Pu'er tea comes , and of which the peacock - chosen as an illustration on the label - is the symbol.
Information on this particular type of tea can be found here .
Sei Montagne is a sort of re-edition inspired by the 2017 Anniversary , a beer that had thrilled us and now comes into line with some different precautions in the infusion of the Pu'er raw material , to enhance the aromatic result and the tactile matrix -gusting in the drink.
The Pu'er - a variety of Chinese tea obtained through a process of microbial fermentation of dried and laminated leaves - enhances the earthy and tannic notes of beer, giving it depth.
The non-invasive acidity , combined with a pleasant minerality , facilitates drinking, while on the palate freshness, body and chewiness alternate, with a touch of heat. The aromatic gives ancient suggestions, including black tea, wine cellar, medicinal herbs and a medlar fruitiness .
