Description
Edinburgh Weisse will be kegged on the 1st November, and shipped the following week. Based on a 19th Century Berliner Weisse recipe our Edinburgh Weisse followed the process as closely as possible. This is an unboiled or raw ale that been aged for the past 10 months on a mixed culture of Brettanomyces and Lactobacillus. All to produce an exceptionally pale straw coloured sour beer with a delicious wine like aroma of peaches and apricots from the Brettanomyces. This beer is only possible thanks to the hard work of Benedikt Koch whose research and blog inspired this brew. Artwork to follow.
