Description
A collaboration with our friends from Siren we made a mixed fermentation Brett ale. We did primary fermentation with a top fermenting Ale yeast, and aged It in red wine barrels. In the barrel we pitched Brettanomyces Amalgamation, which supports the fruity hop aromas and converts the final sugars into alcohol. After blending the barrels, dry hopped with Azacca and Amarillo hops and hibiscus. The result is a bright and fruity Brett Pale Ale, with a tart, dry and hoppy finish that will develop further complexity in time. ABV: 6.5. pH: 3.4. IBU: 8. Time in barrel: 8 months. Barrel type: Red, Cab Sauv
