Spellbound

Description

For this Hazy DDH pale we decided to explore some of what the southern hemisphere has to offer. We used Nelson Sauvin and pacific sunrise hot side to give us a combination of citrus and wine-like characteristics. We used a new yeast strain from WHC labs called Tropical Paradise. This strain has been specifically selected for its glycerol production, high biotransformation capabilities and ester production. We then double dry-hopped with a mix of Nelson, Riwaka, and Pacific Sunrise. The results are a full-bodied sessionable pale with Citrus aromas giving way to tropical elements from the yeast and Riwaka hops.
