Description
It was great to team up with Daryl and the team at Off Day to put together a beer to pair with Honest Burger’s Singapore-inspired fried chicken burger. We wanted a beer that would refresh in Singapore’s muggy climate but also one that would stand up to the post-feast sluggishness (Jelak-ness as they say in Singapore) that inevitably follows a big dinner.
In Singapore, it is typical to drink a lime-nade to wash down a rich and flavoursome dish and this is where we started. There are also few things more refreshing than a cold, crisp lager-style Kolsch but perhaps a twist of lime might just push that refreshment to another level! We added lime zest to the whirlpool along with the distinct lime juice and elderflower aromatic profile of NZ Motueka hops, complemented by the floral citrus character of the US Loral variety. Another ingredient syntomic with Singapore cuisine, and with Honest Burger’s creation, is lemongrass so we added plenty to the whirlpool to ensure some flavour cross-over from burger to beer.
Kolsch brings a touch more flavour than other classic lager strains, and this extra depth boosted by the bready, lightly nutty notes of Munich malt helps the beer stand up to the rich burger flavours without losing cleansing character. A generous dry hop of further Motueka ensures the lime aromas keep drawing you back for one more sip.
