Description
A mixed ferm farmhouse ale 3.8% ABV. We let this one ferment low & slow with a blend of saison, wine & lager yeasts & a Mosaic dry hop during active fermentation to push the thiol levels. Just before fermentation was complete we blended in 5% sour Brett beer for a subtle citrus tang & allowed the yeasts to completely attenuate down to an FG of 1.001. Super dry & complex with notes of pineappley funk, white wine, bready hay & lemony coconut. Small batch - just 12 kegs produced!
