Description
Mixed Fermentation Sour. Aged in red wine barrels with foraged blackberries, sloes & elderberries from the hedgerows on our farm, before being blended with a younger saison and refermented with red grape, with further ageing in stainless.
2 years in the making; we’re getting complex notes of berries and orange zest. Full bodied with a gentle acidity and a moreish tannic finish.
