Halfway through a ten-hour coach trip across Thailand we stop at a roadside cafe; met by the soul-soothing smell of Piled-high fresh mangoes. Served up with Milky, sticky coconut rice, khao niaow ma muang is a thing of pure joy and the inspiration behind this Gose.
