Description
Incorporating new and unusual ingredients in beer is as integral to what we do, at Wild Beer Co, as using the most local ingredients we can. So we teamed up with a local wine producer to relieve them of their grape must and use it in making a sour beer. Grape must is the juice and pomace left behind after the grapes have been pressed. These skins are laden with wild yeasts which would’ve tradition- ally fermented the juice into wine. We thought it was about time that we utilised the wild funk available from wine grapes.
