Our flagship beer, Modus Operandi is the beer we started the brewery to discover through our barrel ageing program. Each year to coincide with the darker months we give this rich ruby red sour beer something a little bit extra. This is an expression of what we do and why we do it, taking some of the best beer we produce from some of our best barrels for the season which best fits the style. Tying in the incredible pairing capacity of Beyond Modus with food in the winter months, lean towards heartier dishes.
